Servings: 8 Peppers
Ingredients:
- 4 Bell Peppers
- 8 slices of cheddar cheese
- 1 packet Uncle Ben’s Brown Rice*
- x1 12 oz can of black beans
- 1 lb 90% lean ground beef
- 15 oz jar of Salsa
- 1 packet of taco seasoning**
Directions:
- Preheat Oven to 350 degrees
- Chop the peppers in half, scrape out the white membranes, and lay then out on a baking sheet lined with parchment paper.
- In a large skillet, brown the beef on the stovetop and then drain any excess liquid using a strainer.
- Add the black beans, salsa, brown rice, and taco seasoning packet to the skillet with the beef.
- Fill the peppers with the filling and then top each pepper with a slice of cheese
- Bake the peppers in the oven for 20 minutes or until the cheese is adequate melted/browned.

* For more protein/fiber, you can substitute the Uncle Ben’s packet for 1 cup cooked quinoa.
**For lower sodium content, you may use 2 tablespoons Mrs. Dash Taco seasoning or a Mrs. Dash taco seasoning packet.
